Homemade Vegan Wild Garlic Pesto Pasta



Fresh wild garlic leaves, pine nuts, and nutritional yeast give this vegan wild garlic pesto pasta a lot of flavor. It only takes minutes to make and tastes great, making it perfect for a quick dinner during the week.

Ingredients:

  • 150g wild garlic leaves
  • 50g pine nuts
  • 50g nutritional yeast
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 4 tbsp olive oil
  • Salt and pepper to taste
  • 250g pasta of your choice

Instructions:

Wash the wild garlic leaves thoroughly and pat them dry

In a food processor, combine wild garlic leaves, pine nuts, nutritional yeast, garlic cloves, lemon juice, and olive oil

Blend until smooth, scraping down the sides as needed

Season with salt and pepper to taste

Adjust consistency by adding more olive oil if necessary

Cook pasta according to package instructions until al dente

Reserve 1/4 cup of pasta cooking water

Drain the pasta and return it to the pot

Add the wild garlic pesto and reserved pasta water

Toss until the pasta is evenly coated with the pesto

Serve hot, garnished with additional pine nuts and wild garlic leaves if desired
