Autumn in a Bowl: Spiced Pumpkin Granola



Indulge in the flavors of autumn with this Spiced Pumpkin Granola. Made with wholesome ingredients like pecans, pumpkin seeds, shredded coconut, and warm spices, this granola is perfect for breakfast or snacking. It's easy to make and can be enjoyed on its own, with yogurt, or as a topping for your favorite desserts.

Ingredients:

  • 2 cups raw pecans
  • 1 cup raw pepitas pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 1 cup blanched almond flour
  • 1/2 cup raw sunflower seeds
  • 1/3 cup maple syrup or honey for non-vegan
  • 1/3 cup pumpkin puree
  • 1/4 cup coconut oil, melted
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions:

Warm the oven up to 300F 150C and put parchment paper on a baking sheet

Put the pecans, pepitas, shredded coconut, almond flour, and sunflower seeds in a large bowl and mix them together

In a different bowl, mix the pumpkin puree, melted coconut oil, cinnamon, ginger, nutmeg, cloves, salt, and vanilla extract with a whisk

You can also use honey instead of maple syrup

Pour the wet ingredients over the dry ones and mix them together until everything is well coated

Spread the granola mix out evenly on the baking sheet that has been prepared

The granola should be golden brown and smell good after 20 to 25 minutes of baking, with a stir every five minutes

Let it cool all the way down on the baking sheet after taking it out of the oven

Once it's cool, break the granola into clusters and put them in a container that won't let air in

You can eat it as a crunchy snack or mix it with yogurt or milk
