Simple Spring Rolls with Ginger Almond Sauce
These simple spring rolls are bursting with fresh vegetables and herbs, wrapped in delicate rice paper. They are light, refreshing, and perfect for a healthy meal or snack. The ginger almond sauce adds a flavorful kick to every bite.
Ingredients:
- 12 rice paper wrappers
- 2 cups shredded lettuce
- 1 large carrot, julienned
- 1 cucumber, julienned
- 1 bell pepper, thinly sliced
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 avocado, sliced
- 1/4 cup almond butter
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/4 cup water
Instructions:
Prepare all the vegetables and herbs and set aside
In a small bowl, whisk together almond butter, soy sauce, maple syrup, rice vinegar, grated ginger, minced garlic, lime juice, and water to make the ginger almond sauce
Fill a shallow dish with warm water
Dip one rice paper wrapper into the water for a few seconds until it softens
Lay the softened wrapper flat on a clean surface
Arrange a small portion of each vegetable and herbs in the center of the wrapper
Fold the bottom of the wrapper over the filling, then fold the sides towards the center, and roll tightly to enclose the filling
Repeat with remaining wrappers and filling
Serve the spring rolls with ginger almond sauce for dipping
