Quinoa White Chicken Chili
A hearty and nutritious twist on classic white chicken chili, this recipe incorporates protein-packed quinoa for a wholesome and satisfying meal.
Ingredients:
- 1 cup quinoa, rinsed
- 1 lb boneless, skinless chicken breasts, diced
- 1 can 15 oz white beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 4 oz diced green chilies
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro, chopped for garnish
- Lime wedges for serving
Instructions:
In a large pot, saut diced chicken until browned
Remove from pot and set aside
In the same pot, saut onions and garlic until softened
Add quinoa, chicken broth, cumin, oregano, chili powder, salt, and pepper to the pot
Bring to a boil
Reduce heat to simmer, cover, and cook for 15 minutes or until quinoa is cooked and liquid is absorbed
Stir in browned chicken, white beans, corn, and diced green chilies
Simmer for an additional 10 minutes
Adjust seasoning if needed and stir in shredded Monterey Jack cheese until melted
Serve hot, garnished with chopped cilantro and lime wedges
